7 Quick Takes Friday - August 10th

Completed an AWESOME DIY project this weekend!!!  Check it out!


I'm going to put my t-shirts in here!  But ran into a small snag last night...when I took them out of the closet, this is what I got!


All folded, I got this...


YUPPER, that's a 58 there, I have 58 t-shirts!!!  Only about 11 of them are size Medium, which I actually wear.  The larges are pretty good for working out, but don't really LOVE them all!  And the XLs are just a flashback to a much bigger Katie...might make them into some grocery bags OR one of the other 250 DIY t-shirt reusing projects I pinned today!  Hopefully they will find a good home!  The only troubling thing is that I feel like I cleaned them out about 6 months ago when I took a TON of stuff to goodwill (3 garbage bags full)...WHERE are they coming from?  And if these are the ones I've decided to keep, what were the others like?

Getting used to our new pastor and assistant priest over here at my parish.  It's very different from our Capuchin Friars. One of the most beautiful things about these men is their life of simplicity.  They take a vow of poverty (I've always heard it first too - poverty, chastity, & obedience) and it is evident in their ministry and their life.  I once heard our previous pastor tell the middle school teens about how he doesn't even have a checking account in his name.  He, individually, owns nothing.  Although practically speaking his clothes and gifts are his - in the grand scheme of things, they aren't .  He would give to the community as needed.  This spirit lived on in our parish, and I pray (& will work so) that it will stay part of our community.

I've been venturing out to make some new recipes this week!  Tonight is another ... barbacoa beef in the crock-pot.  It's smelling amazing, just not sure how to get the sauce to thicken.  It's supposed to look like this...


...we shall see what happens.  No matter how it looks, it already tastes amazing.  I'll serve mine on flour tortillas with salsa, avocado, lime, lettuce, and sour cream or greek yogurt.

For dessert with this we are having mini-peach cobblers!!!

Earlier this week I made this...


...and it was spicy deliciousness on top of my salad!!!  Used greek yogurt instead of mayo, still delish!

Last Friday I also made this...


...and it was amazing!  Tried to make it again on Monday, but only had about 1/2 cup of flour, so I substituted whole wheat, and it was kind nasty!  So, lesson learned - this recipe: white flour only!

Used it as the crust to make this pizza though (added shrimp and roasted garlic as the 'sauce')...

I LOVE trying new recipes and Pinterest has become a little bit of an obsession.  But it's proving fruitful and delicious!!!  Maybe more next week (however, gotta work most nights of the week - Missionaries of Charity two days, Middle School youth group one, Pastor Installation another, Baseball Game with High School students one, then a weekend Core Team retreat Friday through Sunday before youth group on Sunday night - WOW, I'm already exhausted!  I thought summer was 'recovery' time!)...

I receive the weekly notes from the Catholic Match Institute since my unsuccessful dabble in Online Dating some time ago ( link ) and today's included the face of one of my favorite priests. A man who helped me become the Catholic woman, for better or worse, that I am today. He is doing a series of five videos for CM through Advent. The first two are below ... NAS: Travel

How do you travel as a single lady?! Any tips or tricks you'd like to share? Do you have anything fun planned for this year? Multiple times per week when I'm brushing my teeth in the morning I think about how boring my life is, how I never go anywhere. To be honest that is a complete and utter lie. I mean between July 2013 and March 2014, I hung out on four different continents - let along the time I spent traveling around the U.S. to Denver, New York City, Savannah, Orlando, and my parent's place. I'm the girl who bought a plane ticket to Africa and went into the bush all alone. (it's a great story ) Let me type that again - I went to the Congo, alone! I still can't even believe that I did that - it's the craziest thing ever ... but the most amazing experience of my life.
